Broccoli in Pumpkin Gravy

Ingredients:
For gravy:
- Chopped red pumpkin —-200 gm
- Chopped onion —-1/2 cup
- Green chili paste —1 1/2 teaspoon
- Ginger —small piece
- Red chili powder —–1 teaspoon
- Coriander leaves —-1/2 cup
- Chopped tomato —-1 1/2 cup
- Dry coriander powder —1 teaspoon
- Cumin powder —-1 teaspoon
- Chopped garlic —1 teaspoon
- Ingredients for entree:
- Parboiled and chopped broccoli(big pieces) ——1 1/2 cup
- Oil —-1 teaspoon
- Butter —1 1/2 teaspoon
- Bay leave —1
- Cumin seeds —1 teaspoon
- Curd —2 table spoon
- Kasuri methi (dry fenugreek leaves) —1 1/2 teaspoon
- Oil to saute broccoli —–1/2 teaspoon
- Dry whole chili (sabut chili) —1
Serves —- 4
Time —–25 minutes
Recipe:
- Take all gravy ingredients in blender and make paste and keep aside.
- Heat 1/2 teaspoon oil and saute broccoli for one min and remove from heat.
- Heat oil and butter in pan, add cumin seeds , bay leave and dry chili.
- Add paste and saute for 10 min till pumpkin is properly cooked.
- Then add 1/2 cup water and boil for few min.
- Add broccoli and kasuri methi.
- Beat curd and make it smooth and add in above gravy.
- Stir properly and remove from heat.
- Garnish with coriander leaves and fresh cream.
