Mexican Pockets

Ingredients:

  • Hot dog bread or french bread:  2
  • Boiled and smashed rajma (kidney beans): 1 cup
  • Boiled corn: 2 tablespoon
  • Chopped capsicum: 2 tablespoon
  • Spring onion: 2 tablespoon
  • Boiled and smashed potatoes:  1 medium size
  • Chopped garlic: 2 tablespoon
  • Chopped ginger: 1 & 1/2 teaspoon
  • Red chili paste: 1 & 1/2 teaspoon
  • Mexican herbs: 1 & 1/2 teaspoon
  • Oregano: 1 & 1/2 teaspoon
  • Chili flakes: 1/2 teaspoon
  • Tomato ketchup: 1 & 1/2 teaspoon
  • Salt to taste
  • Oil: 1 & 1/2 teaspoon
  • Grated cheese: 1/2 cup
  • Butter: 1 teaspoon

Serves: 2 pieces
Time: 15 min

Recipe:

  • Remove middle part of bread and make pocket.
  • Apply butter inside and keep in oven for 5 min till crispy.
  • Heat oil in pan, add garlic and saute till little brown. Add onion and cook till pink then add ginger cook till brown.
  • Add capsicum and saute for few min. Add rajma, potato, spring onion, red chili paste, mexican herbs oregano, salt, chili flakes, tomato ketchup.
  • Mix all ingredients properly and remove from gas stove. Let it cool then stuff in bread pocket and cover upper layer with grated cheese.
  • Keep in oven on 150 degree for 3 min till cheese melt properly. Garnish with tomato ketchup stripes and sprinkle chili flakes on it.

Note: Jains can make this recipe without garlic

    Have tried this recipe…and it turned out very delicious! Also broccoli kebab recipe was too good!!!
