Thai Vegetable Soup

Ingredients:
- Vegetables stock – 4 cup
- Lemon leaves – 4 pieces
- Chopped lemon grass( white part) – 2 teaspoon
- Grated ginger – 1 1/2 teaspoon
- Square chopped carrot – 1 table spoon
- Square chopped cabbage – 1 tablespoon
- Chopped baby corn – 1 teaspoon
- Fresh chopped red chili – 1 chili
- Soya sauce – 1/2 teaspoon
- Red chili sauce – 1/4 teaspoon
- Pepper powder – 1/4 teaspoon
- Salt to taste
- Coconut milk – 2 teaspoon
- Tofu or paneer small pieces – 1 teaspoon
- Boiled noodles – 1 tablespoon
- Parsley – 1/4 teaspoon
- Chili oil – 1/4 teaspoon
Serves – 4
Time – 15 minutes
- Boil lemon leaves, grated ginger and lemon grass for 10 minutes and strain.
- Add vegetable stock, chopped vegetables, tofu, sauces and spices and boil for two minuted.
- Add coconut milk, boil for a minute and remove from heat.
- First keep noodles in the serving bowl,pour soup on it and garnish with parsley and a few drop of chilli oil while serving.
