Methi Palak Rice (Fenugreek Spinach Rice)

Ingredient: (Serves – 3 to 4, Cooking time – 20 minutes )
For first layer
- 2 cup cooked rice
- 1/2 cup grated paneer
- 1 cup tomato chopped in small pieces
- 1 small onion grated
- 1/2 tea spoon cumin seeds
- 1/2 tea spoon red chilly powder
- 1/4 tea spoon turmeric powder
- salt to taste
Second layer
- 1/2 cup blanch methi puree
- 1/2 cup blanch palak puree
- ginger garlic paste1/2 tea spoon
- pepper powder 1/2 tea spoon
- 1 spoon coriander leaves
- 1/2 tea spoon lemon juice
- salt to taste
Recipe:
- Take 2 table spoon oil in heating pan add ginger garlic paste and saute(stir) it .
- Add chilly paste, pepper powder and both leaves puree. Stir well.
- Cook for a minute and add lemon juice, coriander leaves and cooked rice (1 cup) mix it well.
- Take another pan, add 2 tea spoon oil & add cumin seeds.
- When seeds crackles add chopped onion & cook it till it become pink.
- Add tomatoes cook for one min. Add chilly powder, turmeric powder, salt and paneer.
- Add 1 cup cooked rice stir and add 1 table spoon tomato ketchup. Mix it well.
- Finally take serving plate and put round mold in middle and put methi palak rice first and press it .then add paneer rice press again.
- Remove mold slowly. Garnish with fried palak leaves.
