Muthiya from Bitter Gourd Skin

Ingredients: (Cooking Time: 25 minutes, Serves: 4 to 5)
- 1/4cup bitter gourd skin.
- Coarse wheat flour (mota aata) or suji—2 cup
- Jowar flour–2 spoon(optional)
- Ragi flour (optional) or mix grain flour
- Chilly powder-1 table spoon
- Turmeric powder-1/4 tea spoon
- Dry coriander powder-1 table spoon
- Sugar–111/2 spoon
- Sesame seed-2 tea spoon
- Salt to taste
- Oil for dough 11/2 tea spoon
For tadka—
- 1/2 tea spoon oil, 1/2musted seed, curry leaves
Recipe:
- Peel bitter gourd skin and mix with salt well. rest it.
- Cook in cooker for 2 minutes. Wash it with water. Remove all water and add all flours and oil mix well.
- Add rest of ingredients. Add chopped coriander leaves and make dough with little water. Make oval shape pieces of 4-5 inches.
- Cook it in steamer for 15 min. Cut in small round pieces and pour tadka on it . You can eat without tadka. Garnish with coriander leaves.
Fried Muthiya———
- One can make fried muthiya from this ingredients but you have to use 2 table spoon oil for dough, and make small rounds and press with fingers.
- Heat oil on medium flame and fry muthiya on slow flame till brown. Serve muthiya with green mint and gourd (loki) skin chutney.
Method for chutney——-
- 1 cup mint leaves, 1/4 cup coriander leaves, 1/4 gourd skin , salt, lemon juice 1/2 tea spoon, 1/2 tea spoon cumin seeds, 1 spoon chopped green chilly, 1/2tea spoon fresh coconut piece, 2 ice cub which keeps chutney green.
- Blend all this in a blender.
