Grilled Halloumi with Salsa

Ingredients :

  • Lemon juice : 125 ml
  • Honey : 90 grams
  • Olive oil : 2 tablespoons
  • Chopped garlic : 2 teaspoons
  • Fresh red chili chopped : 1
  • Garlic paste :  1/2 teaspoon
  • Red chili paste or chili sauce ; 1/2 teaspoon
  • Salt to taste
  • Dry parsley :  1/4 for garnishing
  • Halloumi cheese : 800 grams

Preparation time : 10 minutes

Marination time : 1 hour

Grill/Barbecue time : 5 minutes

Serves : 4

Preparation:

  • Combine lemon juice ,honey, salt, olive oil, chopped garlic, garlic paste and red chili paste in a small bowl.
  • Cut the halloumi cheese into thick rectangle slices.
  • Place halloumi cheese in large plate. Add the cheese to half of the mixture above. Reserve remaining mixture for dressing.
  • Cover and keep it in refrigerator for 1 hour.
  • After an hour grill the halloumi cheese on heated oil greased grill plate or nonstick pan over medium heat for 2 minutes or until they turn light brown in color.
  • Stop heat and pour remaining mixture on halloumi cheese and cook for few seconds.
  • Garnish with dry parsley and serve with cooked salsa.

Preparation for salsa :

  • Heat oil in a pan, add chopped garlic and cook till golden.
  • Add chopped onion and cook till golden brown in color, then add tomato puree, salt , tomato ketchup, mix herbs, red chili paste, oregano, chili flakes.
  • Saute for few seconds, remove from heat and add chopped coriander leaves (optional) and vinegar.
