Quinoa Stuffed Bell Peppers

Ingredients :

  • Capsicum/Bell Peppers : 2
  • Cooked quinoa : 1/2 cup
  • Boiled and meshed potato : 1/4 cup
  • Olive oil : 1 & 1/2 teaspoon
  • Garlic paste : 2 teaspoons
  • Tomato ketchup : 1 teaspoon
  • Red chili paste :  1 & 1/2 teaspoon
  • Chopped mushroom : 1 & 1/2 teaspoon (optional)
  • Chopped fresh red chili : 1 piece
  • Ginger paste :  1 teaspoon
  • Chopped coriander leaves :  2 teaspoon
  • Lemon juice :  1 & 1/2 teaspoon
  • Oregano :  1 & 1/2 teaspoon
  • Chopped spring onion :    2 tablespoons
  • Salt to taste
  • Grated cheese : 2 tablespoons (optional)
  • Butter or olive oil for capsicum  : 1/2 teaspoon
Preparation time : 10 minutes
Cooking time : 5 minutes
Preparation:
  • Heat oil in a cooking pan on slow flame,  add garlic and ginger paste .
  • Sauté for few seconds, add chopped chili and mushroom.
  • Cook for 2 minutes, then add potato, quinoa, spring onion, lemon juice, salt, chili paste, tomato ketchup, oregano and coriander leaves in it.
  • Mix properly and remove from heat.
  • Cut  capsicum(bell pepper) in two parts and remove the seeds.
  • Apply butter on the outer layer of bell pepper skin and place the stuffingi inside.
  • Sprinkle grated cheese on it, bake until the cheese melts and capsicum is cooked as per your preference.
  • Garnish with basil leaves.
