Bitter Gourd Veggie – By Ramee Jagesha

Ingredients : (This recipe has been shared by Ramee Jagesha)

  • Bitter gourd : 2 big size ( 200 grams)
  • Chopped fenugreek leaves : 2 cup (200 grams)
  • Salt to taste
  • Oil : 1 & 1/2 teaspoons
  • Cumin seeds : 1 teaspoon
  • Chopped garlic : 2 teaspoons
  • Chopped ginger : 1 & 1/2 teaspoons
  • Chopped tomatoes : 1/4 cup
  • Sesame seeds : 1 & 1/2 teaspoons
  • Garam masala : 1/2 teaspoon
  • Red chili powder : 1 & 1/2 teaspoons
  • Dry coriander and cumin powder : 1 & 1/2 teaspoons
  • Turmeric powder : 1/4 teaspoon
  • Asafoetida : 1/4 teaspoon
  • Extra sesame seeds for garnishing
Serves : 2
Preparation time : 15 minutes
Cooking time : 10 minutes
Preparation:
  • Cut bitter gourd into long vertical sticks approximately 5 inches in length and add them in to a bowl.
  • Add salt in it, mix it properly and leave it for 20 minutes.
  • Heat oil in a cooking pan add bitter gourd and sauté for approximately 5 minutes.
  • Remove the mixture from the pan.
  • You can reuse the same pan and add little oil in this pan, add garlic and ginger .
  • Sauté until the garlic turns golden brown in color.
  • Add asafoetida, fenugreek leaves, salt  and tomato in to the pan.
  • Cook until tomatoes soften then add red chili powder, sesame seeds, coriander powder, turmeric powder, and garam masala.
  • Stir properly and add cooked bitter gourd.
  • Cook for few seconds, remove from heat and garnish with sesame seeds.
