Masala Nankhatai(Spicy Cookies)

Ingredients:

  • Refine flour(maida): 50 gms
  • Bajra (Pearl Millet) flour: 50 gms
  • Powder sugar: 25 gms (depends on taste)
  • Ghee or butter: 50 gms
  • Cooking soda: 1/4 teaspoon
  • Baking powder: 1/4 teaspoon
  • Sesame seeds: 3 tablespoons
  • Salt to taste
  • Yogurt (curd): 1/2 teaspoon
  • Milk : 1/2 teaspoon
  • Ginger paste: 1/4 teaspoon
  • Green chili paste: 1 & 1/2 teaspoons
  • Chopped coriander leaves: 2 teaspoons
  • Red chili powder: 1/2 teaspoon
  • Dry fenegreek leaves: 1/2 teaspoon(optional)
  • Carom seeds(ajvai) : 1 teaspoon

Serves: 15 medium size
Preparation time: 10 minutes
Baking time: 20 to 25 minutes

Preparation:

  • Take a bowl add soda, salt, baking powder, red chili powder in maida, add bajra flour and mix all ingredients properly and keep aside.
  • Take butter and sugar in bowl and beat till fluffy and then add curd and mix.
  • Mix 1 teaspoon of sesame seeds, ginger paste, chili paste, carom seeds, chopped coriander leaves in the bowl. Add this mixture back to the flour bowl.
  • Add 1/2 teaspoon milk.
  • Prepare soft dough adding rest of milk if needed.
  • Divide the dough in15 parts and make small balls and press lightly and rub in sesame seeds.
  • Keep wax paper on oven tray and arrange all balls little distance apart from each other.
  • Preheat oven on 150 degrees celsius for 10 minutes then keep this cookies to bake for 20 to 25 minutes till crispy and little golden.
