Idli Rabdi

Ingredients for idli(sweet circular discs):
- Condensed milk: 200 gms
- Curd (yogurt) : 1 & 1/2 teaspoons
Ingredients for Rabdi:
- Milk: 1 litre
- Lemon juice: 1/2 teaspoon
- Sugar: 3 tablespoons (as per choice)
- Cardamom powder: 1/4 teaspoon
- Chopped pistachios: 1/4 teaspoon
- Chopped almond: 1/2 teaspoon
- Saffron strands: 2 to 3
Serves:12 small idli
Fermentation: 2 hours
Prepare rabdi: 25 minutes
Cooking time: 10 minutes
Preparation for Rabdi:
- Add milk to pan for boiling till quantity is half.
- Add lemon juice drop by drop and stir continuously.
- After 5 minutes add sugar and cook for few seconds and turn off heat and let it cool.
Preparation for Idlis:
- Mix curd or yogurt with condensed milk in a pan and stir properly and leave it for 2 hours.
- Grease idli mold with ghee(clarified butter) and keep 1 table spoon batter in each mold.
- Steam this idlis for 10 minutes. After idlis are cool, remove from mold.
- Arrange idlis in serving plate then pour rabdi on it and garnish with almonds and pistachios.
- Sprinkle cardamom powder and saffron strands.
Note: Serve it chilled.
