Thai Grilled Sandwich

Ingredients:

  • Carrot:  1
  • French beans:  100 grams
  • Cabbage:   100 grams
  • Capsicum:   1 medium size
  • Fresh red chili: 1(chopped)
  • Lemon grass white portion:    1/4 cup
  • Boiled mashed potato:  1 medium size
  • Lemon zest: 1/2 teaspoon
  • Chopped garlic:   3 tablespoons
  • Chopped ginger:  2 tablespoons
  • Red Thai paste (sauce):   2 tablespoons
  • Chopped coriander:    2 tablespoons
  • Salt to taste
  • Olive oil:  1 & 1/2 teaspoon
  • Sesame seeds:  1 teaspoon
  • Lemon juice:  1 teaspoon
  • Chopped onion:  1 piece
  • Basil leaves:   5 pieces
  • Bread slices:  4
  • Butter as per requirement
Time:  15 minutes
Serves:  2
Preparation for Dip:
Take 2 table spoons of cream cheese, add 1/2 teaspoon tomato ketchup, 1/4 teaspoon red chili sauce, pinch of salt and stir properly and sprinkle dry basil leaves.
Preparation for Sandwich:
  • Heat oil in pan and add garlic and ginger. Sauté till golden brown in color and add onion.
  • Cook till transparent. Roughly crush all vegetables in chopper or chop them finely.
  • Add  vegetables, salt and cook  for 5 minutes. Add potato, thai paste, sesame seeds and lemon juice.
  • Cook for few seconds and turn off heat. Add lemon zest, coriander and basil leaves. Let it cool.
  • Apply butter on both sides of bread (or one side), keep stuffing on it and cover with another slice.
  • Grill this sandwich in toaster or griller till golden and crispy. Serve with dip.
Note:  you  can add crushed peanuts too.
