Spinach Rolls in White Sauce

Ingredients:

  • Spinach leaves: 8
  • Olive oil: 1 teaspoon
  • Finely chopped spinach: 1/2 cup
  • Chopped onion: 2 teaspoon
  • Chili paste: 1/2 teaspoon
  • Chopped garlic: 1 & 1/2 teaspoon
  • Boiled and roughly crushed corn: 2 tablespoons
  • Chopped capsicum: 1 tablespoon
  • Salt to taste
  • Pepper powder: 1/2 teaspoon
  • Chili flakes; 1/4 teaspoon
  • Oregano: 1/2 teaspoon
  • Grated paneer(cottage cheese): 2 teaspoons
  • Grated cheese: 2 tablespoons( as per taste)
  • Chili flakes and pepper powder
  • Tomato ketchup for garnishing

Ingredients for Sauce:

  • Butter: 1 & 1/2 teaspoons
  • Refined flour(maida) : 1 tablespoon
  • Chopped onion: 1 & 1/2 teaspoons
  • Garlic paste or chopped: 1 & 1/2 teaspoons
  • Chopped capsicum: 1 teaspoon
  • Baked beans or boiled white beans: 2 tablespoons
  • Finely chopped carrot: 1 teaspoon
  • Boiled green peas: 1 teaspoon
  • Milk: 2 cups
  • Sugar: 1/2 teaspoon
  • Salt
  • Pepper powder: 1/2 teaspoon

Serves: 4
Preparation time: 15 minutes
Baking time: 10 minutes

Preparation:

  • Keep spinach leaves in hot water for 2 minutes so that we can roll them easily.
  • Heat olive oil in pan add garlic and sauté till little brown in color. Add onion and cook till transparent.
  • Add chopped spinach, capsicum, corn and cook for few seconds, add salt, pepper, chili flakes and oregano in the mixture.
  • Turn off the heat and leave it to cool. Stuff spinach leaves with this mixture, make rolls and arrange them in baking dish.
  • Now to prepare sauce, heat butter till it liquifies, add garlic and sauté till brown in color.
  • Add chopped onions, cook for few seconds and then add refined flour and sauté till pink in color.
  • Add beans, capsicum, carrot and green peas. Add milk and stir continuously to avoid lump formation.
  • Add sugar and pepper powder. When mixture is little thick remove from heat and add salt.
  • Pour this sauce on spinach roll sprinkle grated cheese, chili flakes and pepper powder on it.
  • Preheat oven to 180 degrees celsius and bake the spinach rolls for 10 minutes till the cheese melts or as per preference.
  • Garnish with drop of tomato ketchup.
