Yam Sandwich with Sago Mix

Ingredients:
- Suran(yam): 500 gm
- Chat masala: 1 tablespoon
- Salt to taste
Ingredients for Sago Mix:
- Oil: 1 & 1/2 teaspoons
- Cumin seeds: 1 teaspoon
- Sabudana (sago): 150 grams
- Roughly crushed roasted pea nuts: 3 tablespoons
- Green chili paste: 1 & 1/2 teaspoons
- Pepper powder: 1 & 1/2 teaspoons
- Lemon juice: 1/2 teaspoon
- Salt to taste
- Chopped fresh coriander leaves: 1 & 1/2 teaspoon
- Oil for shallow fry: 2 teaspoons
- Green chutney: 2 tablespoons
Ingredients for Dip:
- Curd/Yogurt: 2 tablespoons
- Grated fresh coconut: 1 teaspoon (optional)
- Green chutney: 1 teaspoon
- Mint leaves: 1/2 teaspoon
- Salt
Serves: 4-5 people
Time: 20 minutes
Preparation:
- Boil suran/yam in steamer and not directly in water. After it cools down, keep in refrigerator for at least 2 hours so we can easily cut it in proper slice like bread.
- Wash sabudana/sago and soak in water(less amount) for 3 hours.
- Heat oil, add cumin seeds when it is golden brown and add green chili paste or chopped green chilli.
- Add sago and stir so that sago do not stick to each other. Add peanut, lemon juice, pepper powder and coriander leaves and remove from heat.
- Apply chutney on suran slice and keep sabudana khichdi on it and cover with another slice.
- Prepare all other sandwich same way and shallow fry it with less oil till golden brown.
- Sprinkle chat masala on it and garnish with green chutney drop. Serve with dip.
Preparation for Dip:
- Beat curd in a bowl and make it smooth.
- Add coconut, salt and chutney.
- Add coarsely chopped mint and stir properly.
- Serve with sandwiches.
