Mung Vegetable Raita

Ingredients:
- Curd (yogurt): 1 & 1/2 cups
- Par boiled mung: 1/2 cup
- Finely chopped cucumber: 2 tablespoons
- Raisins: 2 teaspoons
- Finely chopped carrot: 2 tablespoons
- Finely chopped capsicum: 1 tablespoon
- Chopped coriander leaves: 1 & 1/2 teaspoons
- Chopped green chili:1
- Salt to taste
- Sugar: 1 & 1/2 teaspoons( choice)
- Mustard powder: 1/2 teaspoon
- Red chili powder: 1/2 teaspoon
Serves: 2
Cooking Time: 10 minutes
Preparation:
- Soak raisins in hot water for 10 minutes so it becomes soft & remove water.
- Remove excess water from curd and beat properly.
- Add all other ingredients and stir properly and garnish with coriander leaves and raisins.
Note: It is very healthy and a quick recipe. It can be eaten as breakfast also.
