Malai Sandwich

Ingredients:
- Cow’s Milk: 1 litre
- Sugar: 2 cups plus 1 table spoon
- Water: 4 cups
Prepare citric acid solution by mixing:
- Citric acid: 1/2 teaspoon
- Water: 150 ml
Prepare sandwich stuffing by mixing:
- Khoya : 75 grams
- Fresh cream/malai : 2 tablespoons
- Powdered sugar : 2 tablespoons
- Saffron : As per requirement
Preparation:
- Heat the milk and let it cool for 3 to 4 hours. Remove cream from it and reheat it.
- Take hot milk in one serving spoon and add one tablespoon of citric acid solution and stir well.
- Mix this cuddled milk with remaining milk and repeat the procedure till entire milk is cuddled(paneer).
- Drain the paneer and wash it under running water. Squeeze the paneer well.
- Add 1 tablespoon of sugar in the paneer and knead well with your palm till it becomes soft.
- Divide it in 8-9 equal portions and give desired shape to it. Put these in boiling sugar syrup by mixing 2 cups of sugar & 4 cups of water.
- Cover the vessel with a lid and cook it on high flame for ten minutes. Do not open the lid in between.
- After ten minutes switch off the gas & put 5-6 ice cubes or 1/2 cup of cold water in it. Allow it to cool down.
- Take a slice and put a thin layer of the stuffing and put another slice on it. Prepare all the sandwiches and serve.
