Samosa-recipe

Ingredients for Stuffing:

  • Green moong: 1 cup
  • Boiled green peas: 1 cup
  • Finely chopped french beans: 1/2 cup
  • Oil: 2 teaspoon
  • Cumin seeds: 1 teaspoon
  • Roughly crushed fennel seeds: 1 teaspoon
  • Dry mango powder(amchur): 1 teaspoon
  • Sugar: 1 & 1/2 teaspoon (optional)
  • Salt to taste
  • Chopped coriander leaves: 2 tablespoon
  • Green chili paste: 1 & 1/2 teaspoon
  • Garam masala: 1 teaspoon
  • Chopped mint leaves: 1/2 teaspoon (optional)
  • Sesame seeds: 1/2 teaspoon
  • Anardana (pomegranate): 1/4 teaspoon

Ingredients for Outer Crust:

  • Refine flour (maida / All purpose flour): 3 cups
  • Oil: 3 tablespoons
  • Salt
  • Carom seeds: 1/4 teaspoon
  • Oil for frying
  • Water as per requirement

Serves: 12 pieces
Preparation time: 15 minutes
Frying time: 25 minutes

Preparation:

  • Soak moong in warm water for 3 hours and then boil(any method suitable as per your convenience).
  • Squeeze out excess water. Heat oil and add cumin seeds,asafoitida and french beans.
  • Add salt and cover the pan for 2 minutes and then add moong and green peas.
  • Sauté for few seconds and add rest of ingredients . Mix properly and remove from heat and keep it at room temperature.
  • Take flour in bowl add salt, oil and carom seeds and mix properly. Add water slowly and make semi soft dough so you can easily roll it.
  • Divide in 12 pieces. Roll oval shape thin discs and cut in two part.
  • Take one part and fold like ice cream cone and fill with stuffing. Apply little water on borders and fold properly (check the image above).
  • Same way prepare all others.
  • Take good amount of oil in the frying pan so that the samosa can be deep fried properly else it will stick to the bottom of the pan.
  • Heat oil on slow flame and fry 2 to 3 samosa at a time (depends on frying pan size) till golden brown in color.
  • Take a serving dish and put some tissue paper on them so as to soak excess oil from the samosas.
  • Serve with green chutney and raw mango chutney.

Preparation for Mango Chutney:

  • Chop and crush raw mango with jaggery, salt, red chili powder and roasted cumin powder.
  • Add little water & mix well. You are all set.
