Suran Subzee (Yam Subzee)

Ingredients:
- Par boiled yam: 300 grams
- Oil: 2 teaspoons
- Chopped garlic: 2 teaspoons
- Chopped onion: 2 teaspoons
- Chopped ginger: 2 teaspoons
- Cumin seeds: 1 teaspoon
- Chopped green chili: 1 teaspoon
- Roughly crushed dry coriander seeds: 2 teaspoons
- Red chili powder: 1 teaspoon
- Turmeric powder: 1/4 teaspoon
- Garam masala: 1 teaspoon
- Pepper powder: 1/2 teaspoon
- Chat masala : 1/2 teaspoon
- Lemon juice: 2 teaspoons
- Salt to taste
- Water: 1/2 teaspoon
- Chopped coriander leaves: 2 tablespoons
Serves: 2
Time: 15 minutes
Preparation:
- Wash suran(yam) properly and cut in three pieces. Par boil it, do not overcook.
- Let it cool for 10 minutes and chop in medium sized cubes.
- Take a cooking pan add oil, cumin seeds, garlic and heat it.
- Sauté till brown. Add onions and cook till transparent.
- Add half crushed dry coriander seeds and sauté for few seconds.
- Add green chilies, ginger and suran. Stir properly and add red chili powder, turmeric powder, garam masala, chat masala, pepper, salt and sprinkle 1 teaspoon water so that all spices mix properly.
- Add lemon juice and turn off stove. Add coriander leaves and stir.
- Garnish with coriander leaves.
Note – This is dry subji if you want gravy then add 1/2 cup blended curd after removing from heat.
