Chamcham (Bengali Sweet)

Ingredients:
- Cow milk: 500 ml
- Sugar:1 cup
- Water: 3 cup
- Citric acid; 1/4 teaspoon
- Crystal sugar: 1/2 teaspoon
- Saffron: 5 strands
- Dry coconut(grated): 1/2 teaspoon
- Silver sheet for garnishing: 1piece
- Ice cubes: 3
- Pistachios: 1/2 teaspoon (optional)
- Serves: 4 pieces

Cooking time: 15 min
Preparation:
- Add 1 teaspoon water in citric acid and keep aside. Heat milk.
- After the first boil slowly pour citric acid.
- When paneer separates from water remove from heat and keep paneer in muslin cloth in a strainer and remove all water.
- Add cold water and wash paneer. Press and remove water and make it like dough.
- Add pinch of sugar in paneer and smoothen with palm. Dissolve saffron in 1/2 teaspoon milk and add in paneer.
- You can also use yellow food color. Divide paneer in 4 parts and keep one crystal sugar in one portion and make it oval chamcham shape.
- Heat water, add sugar and stir. When sugar completely dissolves and water start boiling add chamcham and cover vessel.
- Cook them for 15 minutes. Remove from heat and add ice cube in it. Let it rest for 3 minutes in sugar syrup.
- Remove one by one from syrup and rub in grated coconut and garnish with silver sheet or pistachios.
