Pumpkin Skin Spread

Ingredients:
- Chopped pumpkin skin—2 cup
- Oil–1 tablespoon
- Mustard seeds–1/2 teaspoon
- Water —3 tea spoon
- Cumin seeds —-1/2 teaspoon
- Green chili –2
- Curry leaves –5 to 6
- Asafoetida–1/4 teaspoon
- Sesame seeds—-2 teaspoon
- Lemon juice–1 tablespoon
- Sugar—-1 teaspoon
- Coriander leaves—1/4 cup
Recipe:
- Heat oil on slow flame. Add mustard seeds, when it crackles add cumin seeds, sesame seeds, curry leaves, green chili, salt and chopped pumpkin skin.
- Saute and add 3 teaspoon water and cook for 5 min. Stir well and add lemon juice and sugar.
- Remove from heat then add coriander leaves. Grind in mixture jar and make smooth paste. If mixture is thick add little water.
- This spread tastes good on cracker or khakhra or thepla.
