Pumpkin Skin Spread

Ingredients:

  • Chopped pumpkin skin—2 cup
  • Oil–1 tablespoon
  • Mustard seeds–1/2 teaspoon
  • Water —3 tea spoon
  • Cumin seeds —-1/2 teaspoon
  • Green chili –2
  • Curry leaves –5 to 6
  • Asafoetida–1/4 teaspoon
  • Sesame seeds—-2 teaspoon
  • Lemon juice–1 tablespoon
  • Sugar—-1 teaspoon
  • Coriander leaves—1/4 cup
Recipe:
  • Heat oil on slow flame. Add mustard seeds, when it crackles add cumin seeds, sesame seeds, curry leaves, green chili, salt and chopped pumpkin skin.
  • Saute and add 3 teaspoon water and cook for 5 min. Stir well and add  lemon juice and sugar.
  • Remove from heat then add coriander leaves. Grind in mixture jar and make smooth paste. If mixture is thick add little water.
  • This spread tastes good on cracker or khakhra or thepla.
