Mix Grain Vada

Ingredients:

  • Makeka atta (yellow corn flour) : 1/2 cup
  • Bajra flour : 1/4 cup
  • Wheat flour roughly grind or suji
  • Jowar flour : 1/4 cup
  • Ragi flour : 2 tablespoons
  • Rice flour:   2 tablespoons
  • moong flour :  (optional) :  2 tablespoons
  • Salt to taste
  • Sugar : 2 tablespoons
  • Curd (yogurt) : 1 & 1/2 cup
  • Roast and roughly crushed fenugreek seeds powder : 1 & 1/2 teaspoons
  • Red chili powder :  2 & 1/2 teaspoons
  • Turmeric powder : 1 teaspoon
  • Chopped green chili : 1/2 teaspoon
  • Sesame seeds : 2 & 1/2 teaspoons
  • Ginger paste : 1/2 teaspoon
  • Baking soda : 1 teaspoon
  • Oil : 1/2 teaspoon
  • Achar(Pickle) masala : 1/2 teaspoon
  • Extra oil for frying
Serves : 15 to 20 pieces
Resting time : 2 hours
Cooking time : 25 minutes
Preparation:
  • Mix all flours in a bowl and add all dry ingredients in it.
  • Mix properly then add oil, sugar, green chilies, ginger and yogurt in it.
  • Add little water and prepare soft dough. Let it rest for 2 hours.
  • After 2 hour softly knead the dough for few seconds.
  • Keep wet cloth on rolling board and take small chunk from the dough and roll into a ball.
  • Press them into semi thick discs and make hole in between. Use the same procedure for rest of the dough.
  • Add oil in a frying pan and heat the oil until its ready.
  • Add the discs in frying pan and fry on slow flame till golden brown in color.
  • Avoid frying them on high flame as the the outer layer might look cooked but the inside might be raw.
  • Sprinkle with sesame seeds.
  • The vadas can be stored maximum for 4-5 days.
