Fusion Mexican Bun

Ingredients For Stuffing:

  • Boiled corn :   1/4 cup
  • Chopped red, green and yellow capsicum (bell pepper) :   2 tablespoons
  • Boiled and mashed potato :  1/2 cup
  • Boiled and meshed beans :   1/4 cup (optional)
  • Salt to taste
  • Red chili paste : 1 & 1/2 teaspoon
  • Chopped garlic : 3 tablespoons
  • Chopped ginger : 1 & 1/2 teaspoons
  • Oregano :  1 & 1/2 teaspoons
  • Chopped spring onions :  3 tablespoons
  • Mexican hubs :  1 & 1/2 teaspoon
  • Tomato ketchup : 1 & 1/2 teaspoon
  • Vinegar : 1/2 teaspoon
  • Chopped coriander leaves : 2 teaspoons
Ingredients for Bun:
  • Refine flour : 1 cup
  • Salt : 1/4 teaspoon
  • Milk :  1/4 cup
  • Dry yeast : 1 teaspoon
  • Sugar : 1 teaspoon
  • Butter :  3 teaspoons
  • Extra refine flour for kneading the dough
  • Oil for greasing oven tray and apply on bun : 1 teaspoon
  • Grated cheese for garnishing : 3 tablespoons (optional)
Serves :  5 to 6 buns
Preparation time : 15 minutes
Flour proving(proofing) time :  2 to 3 hours (depends on weather)
Baking time : 25 minutes
Preparation For Stuffing:
  • Heat oil in a pan, add garlic and ginger.
  • Sauté for few seconds and add capsicum(bell peppers).
  • Cook until soft, add spring onion, corn, chili paste, potato and salt .
  • Stir properly and add potato, Mexican herbs ketchup, oregano and remove from heat.
  • Add vinegar and coriander leaves.
Preparation For Bun: 
  • To prepare dough add yeast, sugar in lukewarm milk and cover with lid.
  • Let it stay for few seconds.
  • Take flour in bowl and add yeast mixture in it, leave it for few seconds.
  • Add salt and prepare smooth dough.
  • If needed add more water to prepare soft dough.
  • Take this dough on any flat platform, add butter and knead by sprinkling flour on it.
  • Kneading time is almost 10 minute .
  • Make small dough balls from dough and apply little oil in bowl, keep this dough for proofing for around 2 hours.
  • After 2 hours roll the dough balls to thick round shaped discs, apply stuffing on it, half fold it and join the ends like wanton.
  • You can give any shape and leave it aside for 10 minute for second proofing.
  • Grease oven tray with oil and arrange buns . Preheat the oven to 180 degrees celsius.
  • Apply milk on buns with brush (milk wash) and sprinkle grated cheese on it.
  • Bake them on 180 degrees celsius for 25 to 30 minutes until properly cooked.
  • Buns should turn light golden in color.
