Tomato Basil Soup

Ingredient: (serves – 4 to 6, cooking time – 30 minutes)

  • 500 gms tomatoes ,halved
  • 3 tsp olive oil
  • 2 tsp butter
  • 1 onion, finely chopped
  • 250 ml vegetable stock or water
  • 300 gm canned cherry tomatoes
  • 3 table spoon fresh cream (choice depends on you)
  • 10 leaves of basil
  • 3 chopped garlic cloves
Recipe:
  • Preheat oven to 220 degree celsius.
  • Place the tomatoes on baking tray.
  • Add garlic and drizzle with olive oil.
  • Roast for 10 minutes.
  • Take pan and heat butter.
  • Add the onions and roasted tomatoes & fry for 5 minutes
  • Add vegetables stock  and cheery tomatoes
  • Bring to boil and simmer for ten minutes.
  • Add basil leaves and bring to boil again.
  • Remove from the heat and strain and make smooth  puree.
  • Heat for 2 minutes and garnish with basil leaves, cream, freshly crushed black pepper and salt.
