Tomato Basil Soup

Ingredient: (serves – 4 to 6, cooking time – 30 minutes)
- 500 gms tomatoes ,halved
- 3 tsp olive oil
- 2 tsp butter
- 1 onion, finely chopped
- 250 ml vegetable stock or water
- 300 gm canned cherry tomatoes
- 3 table spoon fresh cream (choice depends on you)
- 10 leaves of basil
- 3 chopped garlic cloves
Recipe:
- Preheat oven to 220 degree celsius.
- Place the tomatoes on baking tray.
- Add garlic and drizzle with olive oil.
- Roast for 10 minutes.
- Take pan and heat butter.
- Add the onions and roasted tomatoes & fry for 5 minutes
- Add vegetables stock and cheery tomatoes
- Bring to boil and simmer for ten minutes.
- Add basil leaves and bring to boil again.
- Remove from the heat and strain and make smooth puree.
- Heat for 2 minutes and garnish with basil leaves, cream, freshly crushed black pepper and salt.
