Fusion Chinese Bun

Ingredients For Dough:

  • Refine flour : 1 & 1/2 cups
  • Butter : 2 & 1/2 tablespoons
  • Salt : 1/2 teaspoon
  • Yeast : 1 & 1/2 teaspoons
  • Sugar :  1 & 1/2 teaspoons
  • Milk : 1/4 cup
  • Water as required
  • Extra flour for kneading
Ingredients for Stuffing :
  • Oil : 1 & 1/2 teaspoons
  • Chopped ginger : 1 & 1/2 teaspoon
  • Chopped garlic :  2 teaspoons
  • Chopped green chili : 2
  • Ginger garlic paste :  2 teaspoons
  • Chopped cabbage :  2 teaspoons
  • Chopped carrot : 2 teaspoons
  • Chopped capsicum : 1 & 1/2 teaspoons
  • Par boiled moong sprout : 1 & 1/2 teaspoons
  • Chopped spring onion : 2 tablespoons
  • Red chili paste : 1 & 1/2 teaspoons
  • Tomato ketchup : 1 & 1/2 teaspoons
  • Soy sauce : 1 teaspoon
  • Vinegar : 1 teaspoon
  • Salt to taste
  • Pepper powder :  1/2 teaspoon
  • Chopped coriander leaves :  2 tablespoons
  • Chopped mushroom : 2 teaspoons ( optional)
  • Extra milk : 1/2 teaspoon
  • Extra oil : 1/2 teaspoon
  • Small pieces of tofu : 1 & 1/2 teaspoons
Serves : 8 buns
Preparation time : 10 minutes
Proving time : 2 hours
Baking time : 25 to 30 minutes
Preparation  For Preparing Dough:
  • Pour warm milk in a bowl, add sugar and yeast.
  • Cover the bowl and let it stay for approximately 5 minutes.
  • In another bowl, add salt and yeast mixture along with flour.
  • Prepare soft dough, add butter and knead for  10 minutes continuously.
  • Make round balls from the dough and keep them in a bowl.
  • Cover the bowl with a lid and keep in warm place. Let it prove for around 2 hours until the dough doubles in size.
Preparation For Stuffing :
  • Heat oil in a cooking pan, then add chopped garlic and ginger.
  • Sauté for few seconds, add onion and cook until golden brown in color.
  • Add sprouts, cabbage, capsicum, carrot, salt and cook for few seconds on high flame.
  • Do not overcook.
  • Add green chili, spring onions, red chili sauce, soy sauce, tomato ketchup, mushroom, pepper powder, tofu and coriander leaves.
  • Mix properly and remove from heat, add vinegar. Let it cool.
Preparation For Stuffed Bun:
  • Get the dough balls and roll them into big round shape.
  • Apply stuffing in middle part of flattened dough balls.
  • If you want you can perform minor cuts on the dough where the stuffing is not present. This is to make it look fancy.
  • Now cover the stuffing with the flattened dough from both sides.
  • Similarly prepare all and arrange in baking tray.
  • Apply milk with brush and keep it for second proving for 30 minutes.
  • After 30 minutes apply little oil on it and bake it in pre heated oven on 180 degree for 30 minutes.
  • Take them out once they turn golden brown in color.
